Puerto Rican acapurrias

My Puerto Rican mentor has been teaching me to cook Puerto Rican food. This is acapurrias, and it is quite amazing. Shredded plantain, with meat filling (green olives are essential plus Goya spice), rolled into balls, served with fresh tomatoes. Simply delicious. Be sure to flatten the plantain mix super flat in your hand (man hands are better — wink) until almost like making paper, then roll it up in your hand around the filling, and be sure to close up any holes with water and pinching.
